INGREDIENTS
Peach Filling
- 6–7 ripe peaches (about 6 cups), peeled and sliced
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 2 tsp cornstarch (to thicken)

Cobbler Topping
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 stick (½ cup) unsalted butter, melted
- ¾ cup milk (whole milk or 2% works best)
Optional: vanilla ice cream or whipped cream for serving
Steps:
- Preheat oven to 375°F. Lightly butter a 9×13-inch baking dish.
- In a large bowl, combine sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, and nutmeg. Stir until peaches are coated and set aside.
- In a separate bowl, whisk together flour, remaining 1/2 cup granulated sugar, baking powder, and salt.
- Stir in milk, vanilla, and melted butter until just combined to form a batter.
- Pour the batter evenly into the prepared baking dish.
- Spoon the peach mixture (and juices) over the batter—don’t stir. The batter will rise around the fruit as it bakes.
- Bake for 40–45 minutes, or until the top is golden brown and the peaches are bubbly.
- Serve warm with a scoop of vanilla ice cream if desired.
